Buffalo Chicken Burgers


  • 1 lb. ground chicken
  • 1/2 c zucchini shredded (use your cheese grater)
  • 1/2 c shredded carrots
  • 1/4 c scallions, minced
  • 1 egg, beaten
  • 1 tbsp coconut oil
  • 1/2 c Frank’s Red Hot sauce
  • 1 head of lettuce
  • Salt & pepper to taste
  • Plain Greek yogurt (optional)


  • Squeeze out access water from zucchini by using a paper towel
  • In a medium bowl, combine chicken, zucchini, carrots, egg, scallions, hot sauce, salt, and pepper
  • Be sure not to over-mix the ingredients (mixture will be pretty wet)
  • Heat coconut oil in medium skillet
  • Form mixture into patties and place into pan
  • Cook for 4-6 minutes each side, until they are no longer pink inside
  • Place burger onto lettuce leaf
  • Spread Greek yogurt on burger if you’d like
  • Wrap lettuce around burger and enjoy!


Serving size: 1 burger = 1 Red, 1 Green
